Healthy Berry Oatmeal Breakfast Bars

Ingredients
  

  • 3 cups frozen berries any combination of small berries works
  • 1 tbsp arrowroot powder cornstarch works good too
  • 2 cups rolled oats gluten free if needed
  • cups almond flour
  • 1 tsp baking soda
  • ½ tsp salt
  • 2/3 cup honey or maple syrup if honey make sure its liquid
  • ½ cup coconut oil solid at room tempature
  • 1 tsp pure vanilla extract

Equipment

  • Large Mixing Bowl
  • 9x9 Baking Dish
  • Parchment Paper

Method
 

  1. Preheat the oven to 375 degrees and line a 9x9 baking dish with parchment paper
  2. Measure out the frozen berries and place in a microwave safe dish or warm up and thaw on the stove.
  3. Add the arrowroot powder to the berry mixture to thicken up the sauce.
  4. In a large bowl add the rolled oats, almond flour, baking soda, and salt. Mix well.
  5. Add maple syrup or honey vanilla and coconut oil (solid)
  6. Use a fork to mix the ingredients together and cut the coconut oil into the oat, almond flour mixture. You can the mixture to look like a crumb topping.
  7. Reserve 1 cup of this crumb topping for the top. Pour the rest into the 9x9 baking dish and press in an even layer.
  8. Dump the berries over top of the oatmeal layer and spread evenly.
  9. Sprinkle the reserved crumb topping over the berries evenly.
  10. Bake in the oven for 25 mins or until the top and sides are golden brown.
  11. Serve warm or let cool and cut into bars.
