What Ingredients Will You Need?
- Rolled oats – Look for a gluten free oats if you are needing this recipe gluten free. The oats give the bars a hearty, chewy texture.
- Almond Flour – Brings a nice nutty flavor to these bars. ( I linked to the almond flour I use)
- Frozen Berries – blueberries, raspberries, strawberries(cut up), saskatoons, any small berry would work.
- Honey or maple syrup – healthy natural sweetness
- Coconut oil – Keeps this recipe vegan and dairy free. Butter can be substituted if needed
- Arrowroot Powder – Grain free thickener for the berries
- Vanilla, Baking Soda and Salt

Instructions:
- Preheat the oven to 375 degrees and line a 9×9 baking dish with parchment paper
- Measure out the frozen berries and place on a mircowave safe dish or warm up and thaw on the stove.
- Add the arrowroot powder to the berry mixture to thicken up the sauce.
- In a large bowl add the rolled oats, almond flour, baking soda, and salt. Mix well.
- Add maple syrup or honey vanilla and coconut oil (solid)
- Use a fork to mix the ingredients together and cut the coconut oil into the oat, almond flour mixture. You can the mixture to look like a crumb topping.
- Reserve 1 cup of this crumb topping for the top. Pour the rest into the 9×9 baking dish and press in an even layer.
- Dump the berries over top of the oatmeal layer and spread evenly.
- Sprinkle the reserved crumb topping over the berries evenly.
- Bake in the oven for 25 mins or until the top and sides are golden brown.
- Serve warm or let cool and cut into bars.

How to store the Berry Oatmeal Breakfast Bars
Store in an air tight container (I have THIS set of glass storage containers and love them) on the counter for a couple days or in the fridge for up to a week. These bars also freeze well. Freeze individually for a quick breakfast on the go, or whole for am easy weekend breakfast to share.
