One of my all-time favorite soups for the colder months is Cauliflower Broccoli Cheddar Soup. It’s a comforting, and creamy soup that’s perfect for lunch or dinner. Plus, it’s packed with nutritious veggies, making it a wholesome choice for the whole family.

I love to make a large pot of soup early in the day, and enjoy it for lunch and supper. This soup very versatile and can be made in many different ways:
- You can just use broccoli or just cauliflower
- Fresh or Frozen Broccoli and cauliflower can be used.
- Chicken or vegetable broth can be used.
I basically use what I have on hand, but this combination is my favorite. The combination of cauliflower and broccoli makes it seem to taste so much better.
Here are the simple ingredients needed to make Cauliflower Broccoli Cheddar Soup
- 1 tablespoon butter
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 head cauliflower, chopped into florets
- 1 head broccoli, chopped into florets
- 4 cups vegetable or chicken broth
- 1 cup heavy cream or milk
- 2 cups shredded sharp cheddar cheese
- Salt and pepper, to taste
The only special equipment you need is an immersion blender or regular blender. This is the immersion blender I have and absolutely love.
Directions:
- Start by chopping the cauliflower and broccoli into small florets. Set these aside for later.
- Heat the butter in a large pot over medium heat. Add the diced onion and sauté until translucent, about 5 minutes. Then, add the minced garlic and sauté for another 1-2 minutes until fragrant.
- Add the cauliflower and broccoli florets to the pot. Pour in the vegetable or chicken broth and bring to a boil. Reduce the heat to a simmer, cover the pot, and cook until the vegetables are tender, about 15 – 20 minutes.
- Using an immersion blender, blend the soup until smooth. If you prefer a chunkier texture, you can blend only part of the soup. Alternatively, you can carefully transfer the soup in batches to a blender and blend until smooth, then return it to the pot.
- Stir in the heavy cream or milk. Gradually add the shredded cheddar cheese, stirring continuously until melted and well combined. Season with salt, and pepper.
There are many different toppings that can be added:
- Bacon
- Green Onion
- Croutons
- Crackers
- More Cheese!
Tips and Variations
- Make It Thicker: For a thicker soup, reduce the amount of broth or add a couple of peeled and diced potatoes to the soup along with the cauliflower and broccoli.
- Lighten It Up: Use milk instead of heavy cream and reduce the amount of cheese for a lighter version.
- Extra Cheesy: For an even cheesier flavor, add a small amount of grated Parmesan cheese along with the cheddar.
- Bump Up The Protein: Add a cup of cottage cheese to the soup before blending.
