No-Bake Cinnamon Raisin Granola Energy Bites

Ingredients
  

  • cups gluten-free rolled oats
  • 1 cup crispy rice cereal
  • ½ cup natural almond butter creamy, no added sugar or sunflower butter
  • cup honey or maple syrup
  • 2 Tbsp ground flaxseed
  • ¼ cup raisins chopped
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • **Pinch of salt

Method
 

  1. In a large bowl, stir together oats, rice cereal, ground flaxseed, cinnamon, and salt.
  2. Gently heat the almond butter and honey/maple syrup in a saucepan or microwave until smooth and pourable. Stir in the vanilla extract.
  3. Pour the warm mixture over the dry ingredients. Mix until everything is evenly coated. Fold in chocolate chips or dried fruit once cooled slightly.
  4. Refrigerate the mixture for 15–20 minutes to firm up.
  5. Use your hands or a small scoop to roll into 1-inch balls. Press tightly to help them stick together.
  6. Refrigerate in an airtight container for up to 1 week or freeze for 2 months.
