Easy Homemade Chunky Salsa

This easy homemade chunky salsa is packed with fresh tomatoes, onions, peppers, garlic, and cilantro for bold flavor and the perfect texture. Great as a dip or taco topping—and ideal for canning, so you can enjoy it all year long!

Ingredients
  

  • 7 cups tomatoes peeled, cored, and chopped
  • 1 1/2 cups chopped onions
  • 1 1/2 cups chopped bell peppers any color
  • 1/2 cups chopped jalapeno peppers
  • 3/4 cups white or apple cider vinegar
  • 1 tablespoon salt
  • 3 cloves garlic minced
  • 1 small can of tomato paste
  • 1 tsp ground cumin
  • 2 tsp salt
  • 2 tsp ground black pepper
  • 2 tsp dried oregano

Equipment

  • Large Stock Pot
  • Sharpe Knife
  • Water Bath Canner
  • Canning Jars
  • Cutting Board

Method
 

  1. Peel and dice tomatoes and chop up onion, peppers and jalapenos
  2. Add all ingredients to a large stock pot.
  3. Bring to boil, then let simmer of medium heat stirring occasionally
  4. Simmer until desired consistently. Usually around 30-40 minutes.
  5. Prepare Jars, lids for water bath canning
  6. Once salsa is to desired consistency, Ladle salsa into jars leave 1/2" head space
  7. wipe rims with damp cloth and attach lids
  8. water bath can for 15 mins
  9. Let jars cool and check seals
